BANANA RAISIN CAKE SUGAR FREE
1 1/2 c. raisins
1 1/4 c. water
Cook raisins in water. COOL. Drain and save liquid.
Cream:
1/2 c. butter
1/4 c. dry milk powder
4 tsp. oil
Add and beat well:
3 med. bananas, mashed
3/4 c. raisin liquid
1 tsp. vanilla
1/2 tsp. maple flavoring
Combine, add to butter mixture, and beat again:
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
1/2 tsp. salt
ADD AND BEAT AGAIN:
4 egg whites, beaten
ADD AND STIR:
Raisins, set aside
1/3 c. nuts, chopped
Bake in greased 9 x 10 inch baking pan about 30-40 minutes at 350 degrees, or to lightly brown and tested done. Cover with aluminum foil for the first 20 minutes.

DIABETIC FUDGE
1 14 1/2 oz. evaporated milk
3 tbsp. cocoa
1/4 c. oleo
Liquid Sweetner to equal 1/2 c. sugar
1/4 tsp. salt
1 tsp. vanilla
2 1/2 c. graham cracker crumbs
1/4 c. nuts
Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide mixture into 32 balls. Roll in remaining cracker crumbs and chill.
